Grillo is one of Sicily's most iconic white grape varieties, created in the 800th century from a natural cross between Catarratto and Zibibbo. Originally used to make Marsala, it is now vinified primarily as a single varietal, producing fresh, savory, and fragrant white wines.

Organoleptic Characteristics

Color: Straw yellow with greenish reflections.

Aroma: Intense notes of citrus (grapefruit), exotic fruit (pineapple), white flowers and hints of Mediterranean herbs and nettle.

Taste: On the palate it is fresh, mineral and savoury, with a good structure and a persistent finish characterised by a typical almond aftertaste.

Gastronomic pairings

The versatility of Grillo makes it suitable for the whole meal:

Appetizers: Ideal as an aperitif, with raw fish, shellfish and seafood.

First Courses: It goes well with pasta with sardines, sardines a beccafico or pasta with broccoli “arriminato”.

Second courses: Grilled fish or vegetable dishes.

Late Harvest: The passito versions are perfect with traditional desserts such as Sicilian cassata.
