Greco Di Bianco DOP passito Ares wine. Vinification without skins in temperature-controlled steel tanks. Aged in French oak barriques for approximately 2 years. Aged in bottle for 6 months. It has a golden yellow color with amber reflections. Crystalline and consistent. On the nose, it is fruity and complex floral with hints of dates and honey, walnuts and black pepper, almonds and apricots, mustard and caramelized figs.
On the palate, it is sweet, quite warm, smooth, balanced, intense, fine, and persistent, with great concentration and flavor. The flavor is elegant, velvety, and refreshing, with a sea-salty finish mingled with mustard and caramelized figs. Greco di Bianco DOP ARES pairs well with aged cheeses, cakes, desserts made with complex ingredients, jams, dried fruit, and candied fruit. A meditation wine par excellence, it pairs well with cigars and dark chocolate. It is best served at 14–16°C.
CHARACTERISTICS: GREEK WHITE WINE ARES DOP TENUTA DIOSCURI
Soil type: Clayey and calcareous, rich in minerals, with calcareous marl of Pliocene origin.
Altitude: They are found in hilly and flat areas, with altitudes ranging from about 50 to 100 meters above sea level, facing south-east and caressed by the Ionian sea breeze.
