FEATURES: Sauvignon White Wine 2018
Vinification and ageing: Cryomaceration on the skins at 4°C for 12 hours. Soft pressing and fermentation at 14°C for 12-13 days, allowing for a slow and more significant complexity due to the metabolization of the desired aromatic precursors. Fermentation is allowed to finish at 16°C without residual sugars.
Aging: In steel, followed by a further six months of aging on the lees. After light clarification, the wine is immediately bottled to preserve its aromas. It then ages in the bottle for three months.
Sensory analysis: Crystalline, deep straw yellow with golden highlights. Consistent, the nose is complex and zesty, with hints of pineapple, pink grapefruit, and seemingly endless yellow peach. On the palate, it's buttery and vegetal. A balanced wine, fresh and savory yet powerful and structured, it's best enjoyed over time.
Service and pairing at the table: Serve at 10-12°C. It pairs well with well-structured or smoked fish-based first and second courses, and medium-aged cheeses.
