Senatore Cappelli wheat is an ancient grain with no genetic mutation. It has unique organoleptic characteristics, is rich in minerals, and is low in gluten, making it unsuitable for industrial processing.
Its spike can reach a height of 1,80 m, out of reach of weeds and therefore does not require chemical weeding.
